{"id":198,"date":"2016-04-29T15:08:42","date_gmt":"2016-04-29T15:08:42","guid":{"rendered":"http:\/\/alexanders-blueberries.appspot.com\/?p=198"},"modified":"2016-04-29T15:08:42","modified_gmt":"2016-04-29T15:08:42","slug":"blueberry-buckle","status":"publish","type":"post","link":"https:\/\/www.wildblueberries.me\/alexanders\/blueberry-buckle\/","title":{"rendered":"Blueberry Buckle"},"content":{"rendered":"<p>This doubles as a Sunday brunch coffee cake or a dessert for any occasion.<\/p>\n<p>Ingredients for the cake:<\/p>\n<ul>\n<li>\u00be cup sugar<\/li>\n<li>\u00bc cup shortening<\/li>\n<li>1 large egg<\/li>\n<li>\u00be cup whole milk<\/li>\n<li>2 cups flour<\/li>\n<li>2 teaspoons baking powder<\/li>\n<li>\u00bd teaspoon salt<\/li>\n<li>2 cups blueberries (fresh or frozen)<\/li>\n<li>Additional shortening and flour to prepare the baking pan<\/li>\n<\/ul>\n<p>Ingredients for the topping:<\/p>\n<ul>\n<li>\u00bd cup sugar<\/li>\n<li>\u2153 cup flour<\/li>\n<li>\u00bd teaspoon cinnamon<\/li>\n<li>\u00bc cup butter<\/li>\n<\/ul>\n<p>Preheat the oven to 375 degrees.<\/p>\n<p>In a mixing bowl, cream together the sugar and shortening until light and fluffy.<\/p>\n<p>Add the egg and mix until blended. Then add the milk and mix again until blended.<\/p>\n<p>In a separate bowl, sift together the 2 cups flour, baking powder and salt.<\/p>\n<p>Fold the dry mixture into the wet mixture slowly until blended. Fold in the blueberries.<\/p>\n<p>Grease and flour a 9\u00d79 or 8\u00d710 pan. Spread the blueberry batter evenly into the prepared pan.<\/p>\n<p>To make the topping, combine the sugar, flour, and cinnamon.<\/p>\n<p>With a pastry blender or two knives, cut in butter until mixture is crumbly.<\/p>\n<p>Sprinkle over the cake mixture in the pan.<\/p>\n<p>Bake at 375 degrees for 35-40 minutes for an 8\u00d710 pan or 45-50 minutes for an 9\u00d79 pan (until cake tester comes out clean). Other size baking pans may be used \u2013 adjust the cooking time accordingly.<\/p>\n<p>Serve warm or cold, plain or with vanilla ice cream or whipped cream.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This doubles as a Sunday brunch coffee cake or a dessert for any occasion.
