{"id":920,"date":"2016-11-02T14:23:28","date_gmt":"2016-11-02T14:23:28","guid":{"rendered":"http:\/\/localhost:8080\/?p=920"},"modified":"2016-11-02T14:23:28","modified_gmt":"2016-11-02T14:23:28","slug":"wild-blueberry-cornmeal-muffins","status":"publish","type":"post","link":"https:\/\/www.wildblueberries.me\/alexanders\/wild-blueberry-cornmeal-muffins\/","title":{"rendered":"Wild Blueberry Cornmeal Muffins"},"content":{"rendered":"<hr \/>\n<p>Fall is one of our favorite seasons here on the farm. \u00a0The Maine foliage is beautiful and there is comfort in our warm sweaters against the chill of autumn.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"wp-image-921 aligncenter\" src=\"\/wp-content\/uploads\/2016-foliage-2.jpg?=s0\" alt=\"2016 foliage (2)\" width=\"1060\" height=\"608\" \/><\/p>\n<p>Cooking transitions from summer fare to homemade soups and chowders of various kinds&#8211;tomato tortellini, chicken and vegetable with rice, venison stew, chicken gnocchi, seafood chowder. \u00a0A perfect complement, and family favorite, are these quick and easy wild blueberry cornmeal muffins. \u00a0<span style=\"text-decoration: underline;\">The ingredients are simple, and making them is a snap<\/span>.<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Wild Blueberry Cornmeal Muffins<\/span><\/strong><\/p>\n<p>Preheat oven to 375 degrees. \u00a0Grease bottom and sides of 12-cup muffin tin.<\/p>\n<p><span style=\"text-decoration: underline;\">Ingredients<\/span><\/p>\n<p>1 1\/4 cups all-purpose flour<\/p>\n<p>1\/2 cup cornmeal<\/p>\n<p>1\/4 cup brown sugar<\/p>\n<p>1\/2 teaspoon salt<\/p>\n<p>1 tablespoon baking powder<\/p>\n<p>*****<\/p>\n<p>2 cups Alexander&#8217;s wild blueberries (fresh or frozen)<\/p>\n<p>*****<\/p>\n<p>1 cup milk<\/p>\n<p>1\/3 cup butter, melted<\/p>\n<p>1 egg, beaten<\/p>\n<p>*****<br \/>\n<span style=\"text-decoration: underline;\">Directions<\/span><\/p>\n<p>In large bowl sift together dry ingredients (flour, cornmeal, brown sugar, salt, baking powder).<\/p>\n<p>Stir blueberries into the sifted ingredients.<\/p>\n<p>In small bowl combine remaining ingredients (milk, melted butter, beaten egg). \u00a0Pour into flour mixture and stir just until moistened.<\/p>\n<p>Spoon batter into prepared muffin tins.<\/p>\n<p>Bake in preheated 375 degree oven for 20 minutes or until inserted toothpick removes clean.<\/p>\n<p>Let muffins sit for 5-10 minutes before removing from pan.<\/p>\n<p>Bonus: \u00a0If you&#8217;re lucky enough to have a few left over, they are a delicious breakfast item, split and grilled in a lightly oiled or buttered frying pan.<\/p>\n<p>There&#8217;s NOTHING like a wild Maine blueberry,<\/p>\n<p>Denise Alexander<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Fall is one of our favorite seasons here on the farm. \u00a0The Maine foliage is beautiful and there is comfort in our warm sweaters against the chill of autumn.
